Overview
Citrus jelly appears in an ornate mold garnished with peaches and a sprig of mint. The jelly is ready for a dollop of whipped cream in this black and white photo published by The Times on May 4, 1952. The accompanying article reported that canned and frozen citrus juices were at their lowest prices in two years and suitable for both cooking and drinking. For this recipe, The Times explained, “they are combined with gelatin for a handsome and good to eat molded dessert.”

“Unlike the home cook of another generation, who had to make do in March, April and May with the fruits she had canned the year before, today’s shopper has a wide choice of canned and frozen products – peaches, pears, plums and pineapple,” the 1952 article read. “And, thanks to modern transportation and refrigeration, citrus fruits are plentiful not only through the winter but well into the spring.”
