Automatic Fryer
Overview
“An automatic fryer can simplify the frying of such delicacies as those pictured here,” Jane Nickerson, the pioneering food journalist, wrote in The New York Times in 1953. “Shrimp, doughnuts, croquettes or fritters of pineapple and bananas. Jane Nickerson ran the food desk of The Times from 1942 to 1957 and helped shape modern food journalism. She explored new foods, technologies and science, exemplified in her article on how to use an automatic fryer, “that relatively new appliance that very much simplifies deep-fat frying.” With basic fried recipes, she explained what kind of fat to use and at which temperature to cook. She concluded: “Are deep-fried foods digestible? Despite everything to the contrary they are, provided they are properly done.”
To maintain historical integrity, the photograph is reprinted in its original hard-copy condition.
