Overview
By the mid-20th century, cream cheese had taken America by storm, topping everything from smoked salmon and bagels to savory dishes and desserts. Here, mixed with confectioner's sugar and vanilla, it frosts cupcakes. This photo was published in The New York Times on May 31, 1949 in an article by Jane Nickerson, a pioneering food journalist, who wanted to demystify “the complicated processes required in the United States to move food from farm to table."

Jane Nickerson ran the food desk of The Times from 1942 to 1957 and helped shape modern food journalism. In the article accompanying this photo, she explained to readers how cream cheese arrived in their kitchens. “Nickerson was looking for recipes on airplanes and in dining cars on railways and in restaurants and people’s homes. She interviewed James Beard in his apartment. She was exploring new foods and technologies and science,” The Times reported in a 2021 article about her work.
